Cool Cucumber Pasta

“This salad gets its amazing texture from crispy cucumbers and soft pasta. It’s very refreshing and sweet.”

Ingredients
• 8 oz. uncooked penne pasta
• 1 tbsp. canola oil
• 2 medium cucumbers, thinly sliced
• 1 medium onion, thinly sliced
• 1-1/2 cups sugar
• 1 cup water
• 3/4 cup white vinegar
• 1 tbsp. prepared mustard
• 1 tbsp. dried parsley flakes
• 1 tsp. salt
• 1 tsp. pepper
• 1/2 tsp. garlic salt

Direction
• Cook pasta as the package directs; strain and use cold water to rinse. In a big bowl, put the cooked pasta and mix in onion, cucumbers, and oil.
• Combine the rest of the ingredients in a small bowl. Put on the salad, mix to combine. Put a cover on and refrigerate for 4 hours, tossing sometimes. Use a slotted spoon to enjoy. Put the leftovers in the fridge.
