Corn Pasta Salad

“This is a pretty and delicious tricolor pasta with the addition of crunchy peppers, juicy tomatoes and sweet corn.”

Ingredients
• 2 cups cooked tricolor spiral pasta
• 1 package (16 oz.) frozen corn, thawed
• 1 cup chopped celery
• 1 medium green pepper, chopped
• 1 cup chopped seeded tomatoes
• 1/2 cup diced pimientos
• 1/2 cup chopped red onion
• 1 cup picante sauce
• 2 tbsps. canola oil
• 1 tbsp. lemon juice
• 1 garlic clove, minced
• 1 tbsp. sugar
• 1/2 tsp. salt

Direction
• Mix the first 7 ingredients in a big bowl. Mix together the salt, sugar, garlic, lemon juice, oil and picante sauce in a jar with a tight-fitting lid, then shake well.
• Drizzle the dressing over the pasta mixture and toss well to coat. Cover and chill overnight.
